Kalinjot olives come from our village of Qeparo and those around-not many-from the Albanian Riviera; a truly limited production virgin and extra virgin olive oil.
Hand-picked Kalinjot olives are selected from each tree according to strict criteria at harvest time around October to November for this superior caliber of extra virgin olive oil and are cold-pressed immediately at a very low temperature (T <27⁰C), as a result of which, we take only 50% of the olive oil which could be produced by these olive trees This method indicates that no heat or chemical additives were used to extract the oil from the olives, which can alter and destroy the flavors and aromas of the olive oil. Without adding heat to the processing, the olive oil also retains its full nutritional value; vitamins, polyphenols and other antioxidant, and delivering its awe inspiring taste. Our Premium Organic Extra Virgin Olive Oil and Organic Extra Virgin Olive Oil differ from each other from the acidity % and level of peroxides, due to the harvest timing. All other characteristics such as flavour, colour, aroma and texture remain the same. Method of picking olives and production of olive oil is also the same.
